Description and Uses
Nonyl isovalerate has a heavy fruit odor (apple-hazelnut with citrus notes) and a sweet, warm, floral taste. May be synthesized by esterification of n-nonanol with isovaleric acid.
Nonyl isovalerate is used in flavour compositions as a modifier in imitation Apple (interesting for Sherbet Ice flavour), Orange and Hazelnut flavours, and Tobacco flavours. It lends a very natural earthy-oily sweetness to Nut compositions, and this effect should be considered in perfumery, too. Concentration in finished flavoured products is normally as low as 0.5 to 2 ppm.
